Meet Shane: Our Bakery Manager

It’s been 10 years since Shane first joined LUXE Bakery as our Baker and Pastry Chef.

He has popped in and out of LUXE Bakery, but when he was away from us something didn’t feel right. He could see how fast LUXE Bakery was growing and the FOMO was real!

Now Shane is back with his favourite team and is our very talented Bakery Manager.

Shane’s day starts at 6am with a coffee in hand walking the floor and checking in with our employees and production line. His first priority is to ensure operations are running smoothly across all areas and that each department head has everything they need for a successful day.

Also a lover of Artisan baking, Shane admires the impact a small adjustment makes to the entire process, and the importance of trial and testing. The slightest alteration in temperature or volume of a single ingredient can change the quality for our products. Given LUXE Bakery is known for perfect sourdough, quality is always front of mind for Shane.

When we asked Shane what his favourite LUXE Bakery product was, he was quick to respond: our Lemon Meringue Tart. Why? He says that with each bite there is a perfect mixture of the curd and meringue. He’s right, there is! And we can’t blame him for trying to sneak one off the pastry line here and there… they are just too good to refuse.
