Meet Sheena: Our Head of Pastry

Sheena joined LUXE BAKERY two and a half years ago as our Head of Pastry. Yes kids, this dream job really does exist!

Every day is slightly different for Sheena. Generally she begins her day with a team briefing accompanied by a very large coffee. Following the team briefing, she begins to set up production for the day with the support of the team. With quality assurance being at the heart of our operations, Sheena is on call, walking the production lines to ensure our products are top notch.

Sheena also supports the team with staff on training and development... and laughing. Yep, you read that right; laughing. She swears she spends a good part of the day exercising her smile, which is always a good thing.

With a passion for creating things by hand, Sheena explains the “delightful process” is personal and grounding for her. She says you always end with a much better product being able to feel the different stages of the process.

With new product development in her wheelhouse, Sheena also spends a good portion of her time testing and evolving new pastries to ensure the team has a pipeline of amazing new products to launch.

When Sheena isn’t researching and coming up with new product ideas, she explores cafes across Sydney and regional NSW. With so many fabulous cafes to choose from it’s hard to have a favourite, but she is a regular at her local cafe; The Hub House Diner in Dulwich Hill. She says the food and coffee is amazing (her inside tip is the bacon and egg roll with hot sauce) and they also stock a large range of our products. It is a mutual kind of love.

So what’s Sheena’s favourite LUXE Bakery product? Our croissant and danish range. She appreciates that both require an incredible amount of work to create, especially in the volumes that LUXE Bakery produces for our customers, but each croissant is still hand-cut and hand-rolled, taking time and care; they are truly handmade with heart.
