RECIPE | Sweet Potato Hummus Dip

50 Minutes Prep Time | Makes 2 Cups


INGREDIENTS                                          

·         250g Chickpeas

·         1 X large size sweet potato peeled and cubed

·         1 Tbsp Olive Oil

·         1 x whole lemon

·         3 x Tablespoons Tahini

·         ½ tsp Chilli flakes

·         ½ Tsp Paprika

·         2 x Cloves of Garlic

·         1 x Loaf LUXE Sourdough White  

 

METHOD

Roasting Sweet Potato

Step 1: Preheat the oven to 250 degrees Celsius. Add a baking sheet to a tray.

Step 2: Place sweet potato in a mixing bowl and drizzle olive oil, salt, and pepper and mix in.

Step 3: Spread sweet potato out on a baking tray and roast for 25-30min or until soft. Allow cooling for 10 minutes.

Dip

Step 1: In a Food Processor combine tahini & lemon juice until smooth. Add garlic, sweet potato & chili flakes.

Step 2: Open chickpeas and drain well. Add half of the chickpeas to the food processor until smooth, add the remaining chickpeas and blend until thick and smooth.

Step 3: Add Salt to blend in with salt and paprika.

Step 4: Toast up a few slices of LUXE White Sourdough - Dip and Enjoy.
