RECIPE: Caramelised Apple & Butter Pudding
Traditional, simple and oh-so comforting. It’s our LUXE Bakery Sourdough Bread & Butter Pudding, with a caramelised apple twist. The perfect, understated but delicious dinner party dessert that will have your guests wanting more.

INGREDIENTS
1 x large granny smith apple, roughly chopped
3 x tablespoons butter, plus butter for slices of bread
2 x tablespoons caster sugar
100g x raw sugar (1/2 cup)
Pinch of cinnamon
Pinch of nutmeg
6 x slices of LUXE Bakery white sourdough; 1.7kg
100g sultanas (3/4 cup)
300ml milk
300ml heavy cream
2 x eggs
METHOD
Part 1: Caramelise your apples
In a frypan add your chopped apple, butter and caster sugar and cook on medium heat until caramelised; stir regularly
Once caramelised leave the mixture to cool for 5 minutes
Part 2: Putting your bread & butter pudding together
Cut your sourdough slices in half and butter both sides.
Grease (with butter) a small to medium casserole dish.
Put a layer of bread across the bottom of the dish.
Cover your bread with half of the sultanas.
Add your caramelised apples.
Repeat steps 3 & 4.
In a mixing bowl whisk your eggs, cream and milk with all-but 2tbs of your raw sugar to make the custard filling. You are keeping 2tbs of the raw sugar to sprinkle on top before baking in the oven.
Pour this custard mix over your bread, sultana and apple layers.
Allow 30mins resting time for the bread to absorb the custard mix.
After you’ve waited 30 minutes, sprinkle the top of the pudding with your remaining 2tbs sugar, your cinnamon and nutmeg.
Bake at 190 degrees for 30 mins, or until knife comes out clean.
Serve with vanilla ice cream.
